Guacamole Served With Baked Sweet Potatoes

Of course, guacamole served with baked sweet potatoes make a fabulous quick treat to entertain guests. A superb starter for a kid’s birthday party or adult’s anniversary celebration. This delectable healthy guacamole recipe can be a dip for potato wedges, work as a sandwich spread as well as be used in tortilla wraps.



GUACAMOLE





Total Cooking Time: 30 minutes

Ingredients:



  • 2 Avocados (Ripe)
  • Sea Salt
  • 1 Tablespoon of Fresh Lemon/Lime Juice
  • 2 Tablespoons of Cilantro
  • Ground Black Pepper
  • A Quarter of an Onion (Minced)
  • 2 Cloves of Garlic (Minced)
  • 2 Small Chillies (Seeds Removed)
  • Half Tomato (Ripe & Seeds Removed)


Preparation Steps:





  • Slice the avocados in half, get rid of the seed, and scoop out the pulp. Use a fork to mash-up the pulp in a bowl.
  • Add the lime juice, cilantro, minced onion, garlic and chilies along with a pinch of salt & pepper. To control the heat and make the recipe less spicy, use sweet peppers instead of chilies. Mix well.
  • Wrap up the mixture with plastic before placing the bowl in the refrigerator to chill.
  • At the time of serving, garnish with chopped tomato pieces.
The juicy red tomato pieces make the vibrant green guacamole look appealing and taste wonderful.

BAKED SWEET POTATO

You may purchase them and simply warm it up to enjoy with your guacamole. Alternately, baked sweet potatoes are a pretty simple and easy recipe. Therefore, you can opt to make a fresh batch right at home.

Ingredients:



  • 3-4 Sweet Potatoes
  • 2 Tablespoons of Coconut Oil
  • Sea Salt
  • Pepper
  • Paprika


Preparation Steps:



  • First and foremost, preheat oven at 425 degrees Fahrenheit.
  • Slice the sweet potatoes lengthwise into medium thick disks. Cut the disks again length-wise to get the shape of potato wedges or French fries. Transfer all the potato pieces to a bowl.
  • Add coconut oil and gently toss the potatoes ensuring all the pieces are coated with the oil.
  • Add a sprinkling of paprika, salt, & pepper as per preference.
  • Ready the baking tray by placing a baking sheet and spray it with non-sticky grape-seed/coconut oil.
  • Spread the sweet potatoes on the sprayed baking sheet in a way that the pieces do not overlap each other.
  • Bake them till the potatoes turn into a beautiful golden brownish color and become soft.
